Here’s our latest (successful) attempt to banish boring summer salads from our plates.  We’ve been trying to eat healthier, and salads are a great way to get more vegetables (and sometimes, fruit!) into your diet.  But, we get tired of eating the same old salad with bottled dressing. So, we decided awhile ago that we would try to jazz things up, switch up our ingredients, and make our own dressing more often.  Making your own salad dressing is super easy, and always tastes better to me than anything from a bottle.  This is a nice sweet and tangy summer salad – enjoy!

Sweet Baby Greens with Strawberries, Toasted Almonds, and Poppy Seed Vinaigrette

Yields: 4 servings

Salad ingredients

5 ounce bag of sweet baby lettuces
1/4 cup sliced almonds, toasted and cooled
1/2 cup strawberries, thinly sliced

Dressing ingredients

1 tablespoon red wine vinegar
1 tablespoon cider vinegar
2 tablespoons olive oil
1 1/2 tablespoons honey
1 teaspoon shallot, minced
1/2 tablespoon poppy seeds

Method

  1. Place lettuce, almonds, and strawberries in a large salad bowl.
  2. Add all dressing ingredients to a small jar, close tightly, and shake to combine.
  3. Dress the salad in the bowl, or place salad on separate plates and allow people to add their preferred amount of dressing.
